We at Svartå Manor have dedicated one of the lofts to teaching our culinary art to our customers. In this demo kitchen we hold cooking courses, wine seminars and special tastings. The Culinary Academy is proud to be a cooperation partner of Miele. The courses are executed with the highest quality of equipment like the domestic machines of Miele. A cooking session under the guidance of a professional chef de cuisine is not only fun but you can also take the acquired knowledge home and impress your friends and family.

Food and Wine Course
Create a skillful four course menu with the guidance of our chef. During the course you get the chance to taste different wines with the food. We give you tips for food and wine combinations at home. 130 €/person + wine package from 46 €/person
Sushi Course
During this course you will learn the basics of how to prepare different types of sushi. Especially tasting sake, beer, wine and gree tea to the prepaired sushi is trilling experience. 130 €/person + drink package from 49 €/person
Venison and Game Course (1.9-31.3.)
This course takes you through the secrets of a luxury four course dinner made from the game of the season. Our chef guides you through the menu and we taste how different wines work with the dishes. 150 €/person + wine package from 49 €/person
Luxus Dinner
Foie gras, lobster, truffles… A splendid dinner with several courses is prepared on this course with a guidance of our chef. The wine package is a combination of exquisite wines matched to the menu. 170 €/person + wine package from 89 € /person

Cream-cheese mousse with apricots (for 4)

fresh apricots
100 g
dried apricots
2 springs
lemon thyme
100 g
organic sugar
40 g
butter
Cut the fresh apricots into small cubes. Brown the sugar in a pan, add butter and apricot cubes. Bring the mix to a boil and add the lemon thyme, fresh apricots and 1dl water. Cook until the water is reduced and cool the mixture.
Make the cream-cheese mousse:
200 g
philadelphia cream-cheese
50 g
sugar
2,5 dl
cream
Whisk all ingredients until areay. Serve cream cheese mousse topped with the apricot compot. Tip: sprinkle some drops of high quality olive oil over the compot and add some salty peanuts. The salty, sweet, sour combination is a surprising experience for the taste buds.
